Bikini Recipe

Yields 10 servings

For the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Cocktail (yields 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Syrup: Combine all the items in a saucepan, bring to a light boil, agitating to dissolve. After that, turn off the burner allowing it to reach room temperature fully. Transfer to a clean bottle, cap it and refrigerate it chilled, it can be stored for about four weeks.

To make Batch Mix: Mix every spirits and syrup into a big jug, allow it to infuse for an hour, then filter it , ideally through muslin, so it's fully clarified.

To serve: Pour 85ml of the batch mix to a stirring glass packed with ice, and stir carefully for a minute until cold. Pour to a chilled martini glass or a similar vessel, garnish with a few cranberries and finish with a light spray of mandarin oil over the top.
